From my experience, oat flour yields a slightly dense texture that's ideal for pie crusts but not so much for muffins. Muffins made with only oat flour might be crumbly and not so fluffy.

Looking forward to making these as I am recently diagnosed about 3 months ago with type 2. Can I use oat flour in place of the other flours all together?

You should substitute 1/8 cup of coconut flour for the almond flour. Since coconut flour is highly absorbent, add one egg and a tablespoon of milk to the recipe. The finished batter should have a dropping consistency. Happy Holidays!

Merry Christmas, Happy Holidays!
I love the sound of the recipe, can I use coconut flour instead of almond flour!

Dates soaked in warm water and ground together (or date paste) is an excellent substitute for date sugar. Since you used date paste, I'm sure there was no need for adding milk. Thank you for your feedback! I am happy that you loved the recipe.

I made these today! I made two adjustments. I chopped 1/4 cup dates and softened in warm water until they formed a paste. I never needed to add the milk.
Turned out beautiful! And absolutely no sugar as the dates did the job! Thank you we loved the combination of the two flours!

If you used a medium or small cookie scoop, then you probably would have to add more batter to the baking cups. I used a large cookie scoop so the muffins did not stay as balls when they were baked. Additionally, in my recipe, I added some milk to give it a dropping consistency which helps with the final shape of the muffins. Hope this helps.

I think I needed to add more of the mix to each cup. Was I suppose to push down the batter in each cup? Cause they stayed in a ball.
